Alkaline Banana Pumpkin Bread






Wow, what a delicious and amazing healthy bread. Who needs sugar? Not me, and not you!! Did you know that just 1 tsp. of sugar suppresses your immune system for 1 hour? Well, it's true. Here are a few reasons I limit sugar in my life, and in my baking.


 
Reasons to Limit Sugar Intake:
  • It leads to insulin resistance.
  • It promotes inflammation in the body.
  • It can lead to weight gain when ingested.
  • It contributes to non-alcoholic fatty liver disease. In fact, our livers process fructose very similarly to the way they process ethanol. Dr. Robert Lustig calls fructose “alcohol without the buzz.”
  • It appears to act like fertilizer for cancer cells.
  • High fructose diets decrease HDL levels, while reducing the diameter and increasing the density of LDL particles.
  • Glucose and especially fructose can bond to – glycate – proteins and lipids without proper enzymatic control. Keeping that in mind, the many benefits of Raw Organic and Local honey are truly amazing!

Benefits of Raw Organic Local Honey:


  • Organic, raw honey can provide an energy boost. Its carbohydrates supply energy and strength and it can boost your endurance and reduce muscle fatigue.

  • And now for the recipe!!

    All Organic Ingredients:

    • 2 tbsps. Coconut oil
    • 1 cup Coconut Flour (Or Raw Organic Imported Almond Flour)
    • 1/2 Can Organic un-sweetened pumpkin or 1 Package Organic Pumpkin Oatmeal
    • 1/2 Cup Raw Organic Local Honey (Or Maple Syrup, Or Agave I prefer Raw Honey)
    • 3 to 4 bananas mashed
    • 1/2 tsp. Baking Soda
    • 1 cap full of Braggs Apple Cider Vinegar
    • 1 cap full of non-dairy milk (Flax, Almond, Hemp, Coconut, or Cashew)
    • 1 cap full of Vanilla Extract
    • 1/2 tsp. Cinnamon
    • 1/2 tsp. Himalayan Sea Salt or REAL SALT

    Directions:

    Pre-Heat Oven to 350 degrees.

    In a Bowl, mash up bananas with a fork until fully mashed. Add the Pumpkin, vanilla, cinnamon, sea salt, baking soda, honey, flour, coconut oil, vinegar and non-dairy milk. Stirring with the fork until completely mixed. Spray a bread pan with coconut cooking spray, or line with parchment paper. Cook for 60 mins. Let cool, and serve with drizzled honey, or eat as is!! Just wait, you will fall in love!

    I just tried a Rambutan for the first time today. They are sweet, soft and have a honey-like taste. I ate 3 in a row. They are really yummy!!! After I threw away the seeds, I realized you can actually eat them, and they have many benefits.

    Alkaline Zucchini and Sweet Potato Lasanga

    I am telling you, you won't even miss the cheese. This recipe turned out so divine. This noodle-free, gluten-free, veggie-packed lasagna is one of my favorite creations yet! I want to make it again, when I have company, so I can WOW them. This recipe also is made with a home made cashew ricotta, that tastes like cheese. The layers in this lasagna include all organic zucchini cut mandolin style, spinach, spaghetti squash, sweet potatoes, tomatoes, garlic, marinara and cashew ricotta. Like traditional lasagna, this one is even better the next day after all the flavors settle in together. It reheats in the oven just fine. The prep time is 2 hours and it has 8-9 servings.

    Tools:
    • 2.75 quart/11 cup glass casserole dish (9.5x7.5")
    • Mandolin slicer (optional, you can slice veggies thin, but it doesn't work as well as a mandolin.)
    • Blender (For dairy-free ricotta cheese)

    Ingredients:
    • All Organic
    • 2 zucchinis
    • 1 baked sweet potato
    • 1/2 baked spaghetti squash
    • 3 garlic cloves minced
    • baby tomatoes
    • jar of spaghetti sauce
    • spinach
    • Sprinkle of nutritional yeast (optional)
    Bake the sweet potato and the spaghetti squash in the oven for 1 hour. In the mean time get your prepping going. Slicing the zucchini's with your mandolin, mincing your garlic,
    slicing the baby tomatoes. When the sweet potato and spaghetti squash are done you may need to cool it before handling. I just hold them with a towel and slice in half. You can scoop the sweet potato out with a spoon, and you can remove the seeds of the spaghetti squash with a fork. Start your layers as follows. Pour a dab of spaghetti sauce on the bottom of the tray and spread it across. Add a layer of zucchini, then spinach, scoop out the sweet potato and add little bits across the layers, with a fork add layers of the spaghetti squash and scoop out the cashew ricotta and spread it around, or pour it if you didn't chill it first (see directions for the ricotta below). Add the minced garlic in different spots and the baby tomatoes. Repeat until all of the ingredients are used. Finish the top with marinara and cover with tinfoil. Bake at 350 degrees for one hour. At 50 minutes, remove the tinfoil and let bake un-covered for the last 10 minutes. Sprinkle with nutritional yeast to give it a parmesan flavor and look.

    For the cashew ricotta:
    • 1 1/2 cups raw cashews, soaked
    • 1/2 cup water
    • juice of 1 large lemon or 1 tablespoon apple cider vinegar
    • 1 – 2 tablespoons nutritional yeast, optional
    • 1 garlic clove
    • dash of onion powder
    • Himalayan sea salt & cracked pepper, to taste
    Soak the cashews for at least 2 hours in a jar of water, covering the cashews about 2 – 3 inches of water as they will swell up.
     
    Drain cashews and place all remaining ingredients into a blender or food processor, process until creamy stopping to scrape down the sides every few minutes. Taste for flavors adding any additional ingredients. Some like a salty ricotta so feel free to add as much salt as you want.
     
    Store in an air tight container in the refrigerator for an hour or two, this will stiffen the mixture a bit. You can also prepare your dish straight away without refrigeration if needed. Refrigeration will thicken the mixture a bit. If it becomes too thick, add a tad of water and mix well.
    Makes approx. 2 cups. Stores in refrigerator for up to a week.
     This is a meal even your teenager will eat. Now go get cooking!

    Why salads make you happy!!

    The benefits of salad are just beautiful. Even more beautiful is all the different ways you can create a salad. You can have a different salad every single day. With all of the many health benefits of each vegetable you put into it. Some of those benefits are: They help you lose weight. Lettuce and other vegetables contain fiber and cellulose. Besides filling you up, fiber improves your digestion.
    Fiber also helps remove bile salts from the body. When the body replaces these salts it breaks down cholesterol to do so. This is why lettuce is so good for your heart. The vitamin C and beta-carotene work together to prevent the oxidation of cholesterol. This prevents the build up of plaque. Romaine, in particular, has a two to one ratio of omega-3 to omega-6. That's a great ratio. You can eat a lot of salad, and it is still perfectly good for you.
    Did you know? Romaine lettuce calories are 20% protein. Like all whole foods, much of this protein is complete. The minerals in salad help remove toxins and keep your acid/alkaline balance in order. Being more alkaline causes greater energy, clearer thinking, deep restful sleep, and youthful skin.

    The benefits that salad brings and the alkaline effect it brings are as follows: You begin to have abundant physical energy, suffer from fewer colds, headaches, and flu viruses.     Probably about 6 months ago I began juicing again. The reasoning just so happened to be because of a little date I had with my middle son, Mavrick, while downtown Tulsa. We weren't sure where we were gonna go for our date, then I thought about Whole Foods. So we pulled in, sat down and ordered some juice. Mavrick ordered, carrot, apple, lemon. I ordered a shot of wheatgrass with lemon. It felt like a sun shiny day after that. We had so much energy, and went out to eat and laughed all day long. When we got home we told the rest of the family about our awesome day. Then all night I thought about how I must get a juicer tomorrow! As soon as I woke up, I got the kids to school, and went out shopping. My 4 year old, Jack, picked the one with green on it. That was great, because it was the cheapest juicer. We got the South Beach Juicer! Since that day, my kids line up every morning for juice. They love it! If I miss a juicing day, they notice.

    You’ll love the health benefits of juicing. That is, if you want to supercharge your health, boost your immune system and lose a extra pounds. Juicing is awesome. It tastes amazing. With all sorts of flavors and interesting combinations, your taste buds will be leaping for delight. But it’s not just taste that we juice for. It’s also for the very many health benefits of juicing.

    Did you know that 95% of the vitamins and enzymes our bodies need are found in the juice of raw fruits and vegetables? We would need to eat 2 lbs. of carrots, 10-12 apples, or 8 lbs. of spinach to get the same amount of nutrients in one 16 oz. glass of  juice. When you drink juice, that is highly concentrated the vitamins, minerals and enzymes rapidly enter the bloodstream absorbing all of the nutritional benefits of the fruits and vegetables and giving your digestive organs a much-needed rest.

    It is best to drink fresh juice the same day you juice it.  As soon as any juice meets the air it begins to oxidize, compromising its nutritional value. However, storing fresh squeezed juice in the refrigerator in a tightly sealed glass jar slows this process. Adding a lemon helps preserve it too. The best time to drink juice is on an empty stomach or at least an hour before eating a meal. This maximizes the amount of nutrients absorbed into the body. Of course, fresh pressed juice is still loaded with health benefits even if you can’t drink it during the recommended window.

    There is lots of research that shows the healing properties of juicing. Not only will juicing facilitate weight loss, increased energy levels, strengthened immunity, strong bones and a glowing complexion, it may also reduce chances of heart disease, cancer and strokes, three of the leading causes of death. A growing body of research suggests that most vitamin supplements don’t help prevent chronic disease. A synthetic vitamin or mineral is a laboratory simulation of the real thing. Natural, plant-based vitamins and minerals are more easily and completely absorbed by the body.

    Fresh juice not only contains greater nutritional value, it contains life.     STRAWBERRY LEAF TEA

    One of the best things I learned this year is to never throw away my strawberry tops again! During the Summer you can make this tea and then chill it! It quenches thirst like no other! During the Winter you can make this tea, and it will keep you warm. The taste is just as delicious as the strawberries themselves.  Also the benefits for your health are truly amazing. Considering it even fights cancer!


    Organic strawberry leaf tea is a great option for those who want to keep their antioxidant levels topped up and are looking for a caffeine-free alternative to green tea or black tea. A study that was  published in the Czech Journal of Food Sciences found that a water extract of wild/organic strawberry leaves had the strongest antioxidant activity among tested herb and berry extracts, as measured by DPPH free radical scavenging ability. This study assessed the antioxidant activity of water extracts of 17 medicinal herbs and berries, including oregano tops, blackberry leaves, raspberry leaves, rosehips, thyme tops, nettle flowers, mint, elderflowers, linden flowers, chamomile flowers, blueberries, rowan berries and sea-buckthorn berries. That is pretty amazing antioxidant capabilities if I don't say so myself.

    How to make strawberry leaf tea:

    Simply save the strawberry tips that you cut off. Be sure they are still ripe when making it. If they are not ripe, or you think that you won't be able to keep them ripe, you can dry them or freeze them for later use. When ready, just put the whole batch of tips into a soup pot and add 6 to 8 cups of filtered water. You can also make it with other teas. I made the batch above with mint tea. Yum! Strawberry mint tea. It is perfectly delicious all by itself as well.  Bring to a boil and then add sweetener of choice. The sweetener that is the most alkaline is raw organic honey. I use 2 tbsps. Just sweeten to your taste. It's ready when the water has turned pink, and the strawberries have lost some of their color.

    Cucumbers are so refreshing. I love them as a delicious light snack. Whenever I cut up a cucumber, my kids devour the whole plate instantly. I also love them in salad!     ALKALINE ZUCCHINI SPAGHETTI

    This is the most amazing and delicious recipe. I love making meals that are so full of health, that even if you eat too much, you feel so satisfied. You don't feel heavy, or weighed down. You feel clean, and energetic!

    INGREDIENTS (ALL ORGANIC):

    • 1/2 RED ONION
    • 1/2 JALAPENO PEPPER
    • 1 WHOLE GREEN ZUCCHINI
    • 1/2 BELL PEPPER
    • 10 BABY CARROTS
    • 3 GARLIC CLOVES
    • 1 BUNCH SPINACH
    • 4 TSP NUTRITIONAL YEAST
    • 1/2 CUP ALKALINE WATER
    • 1/2 CAN TOMATO PASTE (8 OZ. CAN)
    • 1 CAN FIRE ROASTED DICED TOMATOS
    • 1 LEAF FRESH BASIL
    • 1 TSP HIMILAYEN SEA SALT
    • 1/2 TSP WILDTREE HEARTY SPAGHETTI SAUCE SEASONING (OR YOUR FAVORITE SEASONINGS OF CHOICE)
    • 1 TBLSP OF WILDTREE GARLIC GRAPESEED OIL (OR COCONUT OIL, OLIVE OIL, AVOCADO OIL, OR FLAX OIL)


    FOR THE SAUCE:


    Chop up all of the vegetables. Add the oil to the pan and cook on medium heat. Throw in all of the veggies, (except for the zucchini) add the garlic and spinach last. I like to smash and chop up the garlic, but you can mince it if you like. I usually add the onions, bell peppers, jalapenos and carrots first. Then add the garlic and spinach. Cook until the spinach shrinks. For the zucchini, I used a special grater that I got on
    Amazon. I also have a pampered chef knife that makes the zucchini noodles, and a spiralizer. Any one of those will work to make the zucchini noodles. I go all the way down on each side until I hit the middle. Then I chop up the middle part and add it to the sauté. I steam the zucchini noodles for 10 minutes. Add the 1/2 can of tomato paste, water and canned tomatoes. (Please be aware that it is best to use fresh tomatoes. Canned foods, even organic lose alkaline. If you are fighting cancer or a serious disease it is best not to use canned or frozen foods. Fresh is best.) Simmer for an hour. When the sauce is done, take half of it and blend it if you don't like big chunky vegetables. If you do, then don't worry about it. Sprinkle with a pinch of nutritional yeast. Sprinkle with sea salt and ground pepper to taste. Enjoy!!
